Heat-stable egg yolk powder is the special solution for dressing and mayonnaise industry due to the resistance to high temperatures while keeping strong emulsifying abilities.

OVOSTAR heat-stable egg yolk powder is made from hen egg yolks by breaking and carefully separating egg white and yolk. Upon fermentation by enzymes and salt the product is exposed to pasteurization and then spray drying.
